Fabriquée par Aoki Hamono à Sakai, cette gamme de couteaux est aussi belle que fonctionnelle. Fabriqués à la main à partir d’un acier breveté à 33 couches avec un cœur en super acier VG10 à haute teneur en carbone, ces couteaux comptent parmi les plus tranchants produits au Japon. La finition martelée sur la moitié supérieure de la lame signifie que les aliments collants n’adhèrent pas fortement et font du tranchage, du découpage et du hachage des légumes et de la chair une tâche agréable. Avec un manche ergonomique en acajou et une mitre lisse, ils sont étonnamment confortables lors d’une utilisation prolongée. L’aiguisage, grâce au noyau ultra-fin, est très facile et le reste pendant les nombreuses années où ce couteau est conçu pour être utilisé dans une cuisine active.

Tip: Whilst the 240mm or the 270mm lengths are the most popular select the longest length you are comfortable with. The longer the blade, the lesser the pressure required to cut the food and thus increase the ability to cut thinner slices. As this is one knife that is often taken to the table for carving in front of the diners, apart from the functionality, aesthetics should be an important consideration.
